Torta di Ricotta Recipe

Crust

  • Grease 9″ plate
  • 1 cup flour
  • 1/4 cup butter
  • 1/4 cup sherry
  • 1/4 tsp. salt.

Filling

  • 4 oz toasted almonds
  • 2 eggs
  • 1/2 cup sugar
  • 1 tsp. vanilla
  • 1 lb Ricotta
  • 4 oz Candied cherries
  • 4 oz Candied pineapple

Directions

Beat eggs and sugar.
Add vanilla and ricotta.
Stir in almonds, cherries and pineapple.
Bake at 325 for 1 hour.

Mom’s Italian Meatballs Recipe

Ingredients

Italian Meatballs, Italian Recipes

  • 1 lb. ground beef (at least 90% lean)
  • 1 egg
  • 1/4 cup of chopped fresh onion
  • 1 tsp. salt
  • 1 tsp. parsley
  • 1 tbs. of grated Romano cheese (or Parmesan)
  • 2 slices of Italian Bread

Directions

  • Blend all ingredients (except meat) in blender.
  • Mix liquid with ground beef in large mixing bowl.
  • Wet your hands when forming the meatballs.
  • Add meatballs to sauce as you make them.
  • Cook in sauce for at least an hour.
  • Makes 12 of the best meatballs you have ever tasted.

Braciole (Italian Beef) Recipe

Ingredients

  • 1 lb. thinly sliced beef
  • 1/3 cup grated Parmesan cheese
  • 1 1/2 tbs. butter or margarine
  • 1 tbs. parsley
  • 1/4 clove garlic
  • 3 cups tomato sauce
  • 1 tsp. salt
  • 1/2 tsp. pepper

Directions

  • Flatten steak and cut into strips about 3 inches wide.
  • On each strip, rub with garlic and dot with butter.
  • Then sprinkle parsley, cheese, salt, and pepper.
  • Tie with string or toothpick.
  • Brown in Extra Virgin Olive Oil.
  • Cook in tomato sauce for 1 hour.

Gnocchi con Ricotta Recipe

Ingredients

  • 2 lb Ricotta Cheese
  • 1 tsp. salt
  • 1 egg
  • 4 cups flour

Directions

Mix Ricotta with salt & egg.
Add flour 1 cup at a time.
When dough isn’t stick to the touch, knead.
Break off chunks and roll into ropes.
Cut off pieces and roll in flour.
Dry on floured board, sheet, or towel.
Boil 10-15 min.
Drain and serve with sauce and cheese.
