Crust
- 1-cup flour
- 1/4 tsp. salt
- 1/4-cup water
- 1/4-cup soft butter
- 1/4 tsp. anise
- Greased 10″ pie plate
Filling
- 4 eggs
- 1-cup sugar
- 2 lbs. Ricotta cheese
- 1 tsp. Anise
- 2 tsp. Vanilla
- 3 tsp. Lemon juice
Directions
- Crust: Mix flour, water, butter, salt, and anise.
- Roll out and put in 10 inch pie plate.
- Filling: Mix eggs, sugar, ricotta, anise, vanilla, and lemon juice and pour into crust.
- Bake at 400 for 15 minutes.
- Then bake at 350 for 45 minutes.

Ingredients
- 1 1/2 lb. ground beef
- 1/2 lb. ground pork
- 3 tbsp. chopped parsley
- 2 eggs
- 1/4 cup olive oil
- 1/3 cup Romano cheese, grated
- 1 tsp. salt
- 1/2 tsp. black or red pepper
- 1/3 cup green pepper, chopped
- 1/3 cup onion, finely chopped
Directions
- Mix meats, eggs, grated cheese, and spices.
- Pour oil in 5 by 10 loaf pan and then place meat mixture in pan.
- Cover and bake at 350 for 45 minutes.
- Slice and serve hot.

Ingredients
- 1 lb. veal cutlets (cut about 1/2 inch thick)
- 1/2 cup flour
- 1/2 tsp. salt
- 1/2 tsp. black or red pepper
- 1 clover garlic, chopped
- 1/2 cup olive oil
- 2 cups tomatoes (canned)
- 1/2 tsp. chopped parsley
- 1/2 tsp. oregano
Directions
- Wipe veal with clean damp cloth and flatten. Cut into 1 inch pieces.
- Combine flour, salt and pepper and then coat veal with this mixture.
- Heat garlic and oil in large skillet with tight fitting cover until garlic is lightly browned.
- Add veal and slowly brown both sides.
- While veal is browning, combine tomatoes, salt chopped parsley, oregano, and pepper.
- Slowly add this mixture to the browned veal.
- Cover skillet and simmer about 25 minutes or until veal is tender.
