Italian Ricotta Cheesecake Recipe

Crust

  • 1 1/2 cups ground butter cookies
  • 1/4 cup melted butter

Press on bottom and sides of greased 11 X 7 pan.

Filling

  • 3 yolks
  • 1 lb. Ricotta cheese
  • 2/3 cups evaporated milk
  • 1/2-cup sugar
  • 2 tbsp. flour
  • 1/4 tsp. salt

Directions

  • Italian CheesecakeMix all ingredients together.
  • Beat 3 egg whites until foamy.
  • Add 1/4-cup sugar.
  • Beat stiff. Fold into Filling.
  • Pour over crust.
  • Bake at 300 for 45 minutes.
  • Cool.
  • Refrigerate.

Easy Strawberry Cool Whip Pie

Ingredients

  • 2/3 cup boiling water
  • 1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
  • ice cubes
  • 1/2 cup cold water
  • 1 tub (8 oz.) Cool Whip Lite Whipped Topping, thawed
  • 1 ready-to-use reduced-fat graham cracker crumb crust (6 oz.)
  • or 1 ready-to-use chocolate or Oreo crumb crust (6 oz.)

Directions

  • Add boiling water to gelatin mix; stir 2 min. until completely dissolved.
  • Add enough ice to cold water to make 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.
  • Mix in Cool Whip.
  • Refrigerate 20 to 30 min. or until mixture is very thick and will mound.
  • Spoon into crust.
  • Refrigerate 4 hours or until firm.

Variation
Strawberry Cool Whip Pie

  • Chop up 2 cups of strawberries.
  • Set aside 1 cup in refrigerator.
  • Add 1 cup of strawberries to gelatin/Cool Whip mixture.
  • Top with strawberries after pie sets.

OK, this is not very Italian, but it is too good to leave out.

Spumoni Cake Recipe

Ingredients

  • 1 yellow cake mix
  • 4 eggs
  • 1-cup sour cream
  • 3/4-cup oil
  • 1 pkg. instant vanilla pudding
  • 1/2 cup chopped nuts
  • 1 8 oz. chopped cherries
  • 2 oz. unsweetened chocolate melted
  • 4 drops each red and green food color
  • 1/2 tsp. almond extract

Directions

  • Beat items 1-5 together for 2 minutes.
  • Divide into 3 bowls.
  • 1. Add nuts an and green food color.
  • 2. Add cherries and red food color.
  • 3. Add chocolate and almond.
  • Grease Bundt pan well.
  • Pour 1, then 2, and then 3.
  • Don’t swirl.
  • Bake at 350 for 1 hour.
  • Cool 10 Min.
  • Remove Cool.
  • Sprinkle with confectionery sugar.

Mom’s Italian Ricotta Cheese Pie Recipe

Crust

  • 1-cup flour
  • 1/4 tsp. salt
  • 1/4-cup water
  • 1/4-cup soft butter
  • 1/4 tsp. anise
  • Greased 10″ pie plate

Filling

  • 4 eggs
  • 1-cup sugar
  • 2 lbs. Ricotta cheese
  • 1 tsp. Anise
  • 2 tsp. Vanilla
  • 3 tsp. Lemon juice

Directions

  • Crust: Mix flour, water, butter, salt, and anise.
  • Roll out and put in 10 inch pie plate.
  • Filling: Mix eggs, sugar, ricotta, anise, vanilla, and lemon juice and pour into crust.
  • Bake at 400 for 15 minutes.
  • Then bake at 350 for 45 minutes.
