Chicken with Zucchini and Tomatoes Recipe

Ingredients
- 1 lb. 4 boneless skinless chicken breast halves
- 2 tbsp. olive oil
- 2 small zucchini (1 lb)
- 2 cups stewed tomatoes
- 1/4 tsp. Basil
- 1/4 tsp. Oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions
- In large skillet sauté chicken in oil about 10 minutes and drain.
- Add zucchini, tomatoes, seasoning, salt, and pepper.
- Simmer covered 10 minutes until fork tender.
- Serve over rice.
