Chicken with Zucchini and Tomatoes Recipe

Ingredients

  • 1 lb. 4 boneless skinless chicken breast halves
  • 2 tbsp. olive oil
  • 2 small zucchini (1 lb)
  • 2 cups stewed tomatoes
  • 1/4 tsp. Basil
  • 1/4 tsp. Oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions

  • In large skillet sauté chicken in oil about 10 minutes and drain.
  • Add zucchini, tomatoes, seasoning, salt, and pepper.
  • Simmer covered 10 minutes until fork tender.
  • Serve over rice.

Cannoli Recipe

Shells

  • Italian Cannoli3 cups flour
  • 1/4 cup sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 3 tbsp. shortening
  • 2 eggs well beaten
  • 2 tbsp. white vinegar
  • 2 tbsp. cold water

Filling

  • 3 cups ricotta cheese
  • 1 1/4 cup sugar
  • 2 tsp. vanilla
  • 1/2 cup citron finely chopped
  • 1/4 cup chocolate pieces (bits)

Directions

Have 18 Cannoli tubes cut into 6 in. lengths.
Mix filling ingredients together and place in refrigerator to chill.

Put in bowl, sift together, flour, sugar, cinnamon and salt.
Cut in shortening, stir in beaten eggs.
Blend in vinegar and water a tbsp. at a time.
Knead 2 minutes, wrap in wax paper and chill for 30 minutes.
Set out a saucepan and heat 1 qt. oil to 360.

Using a cardboard oval 6 in. X 1 1/2 in. as a pattern,
Cut out Cannoli shells and wrap loosely around tubes.
Seal with egg white.
Fry for 8 minutes, a few at a time.
Cool slightly and remove tubes and let cool completely.
Fill with ricotta filling – dust with confectionery sugar.

Mom’s Italian Pizza Recipe

Pizza Dough

  • Italian Pizza7 cups flour
  • 3 tbsp. oil
  • 1 1/2 tsp salt
  • 1/4 tsp. pepper
  • 2 pkg Yeast
  • 1/4 tsp. Garlic powder
  • 2 1/4 cup warm water
  • 1 1/2 lb shredded Mozzarella cheese

Directions

  • Dissolve yeast in water.
  • Add oil.
  • Mix flour, salt, pepper, and garlic.
  • Add liquid.
  • Knead until smooth.
  • Divide in 3 pieces.
  • Let rise.
  • Spread in greased 15X10 pans.
  • Sprinkle mozzarella over dough in 3 pans.
  • May use 4-12″ round pans instead.
  • Pour Pizza Sauce on Top.

Pizza Sauce

  • 1 28 oz. can Italian peeled tomatoes
  • 1 small chopped onion
  • 3 tbsp. Parmesan cheese
  • 1 tbsp. oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. soda
  • 1/4 tsp. garlic
  • 1/2 tsp. sweet basil

Directions

  • Put all ingredients in blender and mix.
  • Divide sauce over 3 pans dough.
  • Bake 400 for 15 minutes.
  • Cool 5 minutes.
  • Cut with scissors.

Veal and Peppers Recipe

Ingredients

  • 2 lbs. veal cutlets cut into 2 in. pieces
  • 6 green peppers cut into 2 in. pieces
  • 2 medium onions, chopped
  • 1/4 cup cooking wine
  • 1/4-cup olive oil
  • 1 can of plum tomatoes
  • 1 tsp. salt
  • 1/2 tsp. red or black pepper

Directions

  • Brown onions in olive oil, then take out of pan.
  • Sauté cut veal in oil and add onion and peppers.
  • Add wine and let cook for 10 minutes on medium heat.
  • Add tomatoes and cover pan.
  • Cook slowly for 45 minutes.

Italian Holiday (Christmas / Easter) Butter Cookies Recipe

Ingredients

  • 3 cups cake flour (sifted)
  • 1 cup butter or margarine
  • 1 1/2 cups confectionery sugar
  • 1 egg
  • 1 tsp. salt
  • 2 tsp. Vanilla

Directions

  • Mix ingredients together.
  • Shape in to 6″ X 8″ rectangle
  • Cut into 48 pieces.
  • Press into cookie molds.
  • Brush top with milk.
  • Sprinkle top with colored sugar.
  • Bake at 350 for 5 minutes.

Mom’s Italian Lasagna Recipe

Ingredients

  • Italain Lasagna2 lbs Ricotta Cheese
  • 4 large eggs
  • 1/4 cup of grated Romano cheese
  • 1/2 lb shredded Mozzarella cheese
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp. of parsley (crushed with hands when adding)

Directions

  • Partially cook Lasagna macaroni for about 5 minutes.
  • (or use Lasagna that does not require precooking).
  • Mix ingredients in blender or large mixing bowl to make filling.
  • Add 1 cup of sauce on bottom of stainless steel 13 x 9 x 2 pan.
  • Alternate layers of macaroni, filling, and sauce.
  • Bake at 400 for 1 hour.

Veal Scaloppini Recipe

Ingredients

  • 1 lb. veal cutlets (cut about 1/2 inch thick)
  • 1/2 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp. black or red pepper
  • 1 clover garlic, chopped
  • 1/2 cup olive oil
  • 2 cups tomatoes (canned)
  • 1/2 tsp. chopped parsley
  • 1/2 tsp. oregano

Directions

  • Wipe veal with clean damp cloth and flatten. Cut into 1 inch pieces.
  • Combine flour, salt and pepper and then coat veal with this mixture.
  • Heat garlic and oil in large skillet with tight fitting cover until garlic is lightly browned.
  • Add veal and slowly brown both sides.
  • While veal is browning, combine tomatoes, salt chopped parsley, oregano, and pepper.
  • Slowly add this mixture to the browned veal.
  • Cover skillet and simmer about 25 minutes or until veal is tender.

Italian Neapolitan Cookies Recipe

Ingredients

  • Italian Neapolitan Cookies2 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup margarine or butter
  • 1 1/2 cups sugar
  • 1 egg
  • 1 tsp. Vanilla
  • 1/2 tsp. almond extract
  • 5 drops red food coloring
  • 1/2 cup finely chopped walnuts
  • 1 oz. Unsweetened chocolate, melted and cooled to room temperature.

Directions

  • In a small bowl, stir together flour, baking powder and salt and set aside.
  • In medium mixing bowl, beat margarine, or butter with electric mixer on medium speed for 30 seconds.
  • Add sugar and beat until fluffy.
  • Add egg and vanilla; beat until just combined.
  • Slowly add the flour mixture, beating on medium speed for 3 minutes.
  • Line a 9 X 5 X 3 loaf pan with waxed paper, allowing the ends of the paper to hang over the sides of the pan; set aside.
  • Divide the dough into 3 portions.
  • To one portion stir in almond extract and red food coloring, pat into bottom of pan.
  • To another third of dough, stir in chopped nuts; pat evenly over pink dough in the pan.
  • To the remaining dough, stir in melted chocolate, pat evenly onto the nut dough.
  • Cover and let chill at least 4 hours or until the dough is firm enough to slice.
  • Lift the wax paper to remove the chilled dough from the pan.
  • Cut the dough in half, length wise, then slice each half cross wise into 1/4 inch thick slices.
  • Arrange slices about 1 inch apart on an ungreased cookie sheet.
  • Bake in over at 350 for 10-12 minutes or until edges are firm and light brown.
  • Cool on cookie sheet for 1 min, then transfer cookies to wire rack to cool.
  • Makes 72 to 84 cookies.

Mom’s Italian Pasta Sauce Recipe

Ingredients

  • Italian Ravioli30 oz can whole tomatoes
  • 6 oz can of tomato paste
  • 1 1/2 cups of water
  • 1/2 tsp. salt
  • 1/2 tsp. sugar (or baking soda)
  • 2 cloves garlic
  • 1/2 tsp. basil
  • 1/4 tsp. oregano
  • 1/4 tsp. parsley

Directions

  • Add tomato paste, water, salt, sugar, and garlic into blender.
  • Crush spices in hands as you add to blender.
  • Blend ingredients and add to mix large saucepan.
  • Mix tomatoes in blender and stir in with ingredients in saucepan.
  • Simmer on medium heat for 30 minutes.

Options

Add chopped peppers or onions
Scramble some ground beef, or put in some meatballs if you’d like meat

Minestrone Piemontese Italian Soup Recipe

Ingredients

  • 1/4 lb. salt pork
  • 1 cup shell beans
  • 3 large potatoes
  • 3 carrots
  • 2 onions
  • 2 cloves garlic
  • Salt and pepper to taste
  • 1 tbs. Parsley
  • Grated Parmesan cheese
  • 1 cup tomato or 1 tbs. tomato paste
  • 3 qt. Water
  • 1 tsp. Basil

Directions

  • Cut vegetables into cubes.
  • Put salt pork in a large pan and add water.
  • Add vegetables, beans, tomatoes, garlic, and cook for 1 hour.
  • Let simmer for another 1/2 hour or until vegetables are cooked.
  • Add salt and pepper to taste.
  • Serve hot with grated Parmesan cheese over it.
  • Serves 4-6.
