Italian Neapolitan Cookies Recipe

Ingredients

  • Italian Neapolitan Cookies2 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup margarine or butter
  • 1 1/2 cups sugar
  • 1 egg
  • 1 tsp. Vanilla
  • 1/2 tsp. almond extract
  • 5 drops red food coloring
  • 1/2 cup finely chopped walnuts
  • 1 oz. Unsweetened chocolate, melted and cooled to room temperature.

Directions

  • In a small bowl, stir together flour, baking powder and salt and set aside.
  • In medium mixing bowl, beat margarine, or butter with electric mixer on medium speed for 30 seconds.
  • Add sugar and beat until fluffy.
  • Add egg and vanilla; beat until just combined.
  • Slowly add the flour mixture, beating on medium speed for 3 minutes.
  • Line a 9 X 5 X 3 loaf pan with waxed paper, allowing the ends of the paper to hang over the sides of the pan; set aside.
  • Divide the dough into 3 portions.
  • To one portion stir in almond extract and red food coloring, pat into bottom of pan.
  • To another third of dough, stir in chopped nuts; pat evenly over pink dough in the pan.
  • To the remaining dough, stir in melted chocolate, pat evenly onto the nut dough.
  • Cover and let chill at least 4 hours or until the dough is firm enough to slice.
  • Lift the wax paper to remove the chilled dough from the pan.
  • Cut the dough in half, length wise, then slice each half cross wise into 1/4 inch thick slices.
  • Arrange slices about 1 inch apart on an ungreased cookie sheet.
  • Bake in over at 350 for 10-12 minutes or until edges are firm and light brown.
  • Cool on cookie sheet for 1 min, then transfer cookies to wire rack to cool.
  • Makes 72 to 84 cookies.

Mom’s Italian Pasta Sauce Recipe

Ingredients

  • Italian Ravioli30 oz can whole tomatoes
  • 6 oz can of tomato paste
  • 1 1/2 cups of water
  • 1/2 tsp. salt
  • 1/2 tsp. sugar (or baking soda)
  • 2 cloves garlic
  • 1/2 tsp. basil
  • 1/4 tsp. oregano
  • 1/4 tsp. parsley

Directions

  • Add tomato paste, water, salt, sugar, and garlic into blender.
  • Crush spices in hands as you add to blender.
  • Blend ingredients and add to mix large saucepan.
  • Mix tomatoes in blender and stir in with ingredients in saucepan.
  • Simmer on medium heat for 30 minutes.

Options

Add chopped peppers or onions
Scramble some ground beef, or put in some meatballs if you’d like meat

Minestrone Piemontese Italian Soup Recipe

Ingredients

  • 1/4 lb. salt pork
  • 1 cup shell beans
  • 3 large potatoes
  • 3 carrots
  • 2 onions
  • 2 cloves garlic
  • Salt and pepper to taste
  • 1 tbs. Parsley
  • Grated Parmesan cheese
  • 1 cup tomato or 1 tbs. tomato paste
  • 3 qt. Water
  • 1 tsp. Basil

Directions

  • Cut vegetables into cubes.
  • Put salt pork in a large pan and add water.
  • Add vegetables, beans, tomatoes, garlic, and cook for 1 hour.
  • Let simmer for another 1/2 hour or until vegetables are cooked.
  • Add salt and pepper to taste.
  • Serve hot with grated Parmesan cheese over it.
  • Serves 4-6.

Spumoni Cake Recipe

Ingredients

  • 1 yellow cake mix
  • 4 eggs
  • 1-cup sour cream
  • 3/4-cup oil
  • 1 pkg. instant vanilla pudding
  • 1/2 cup chopped nuts
  • 1 8 oz. Chopped cherries
  • 2 oz. Unsweetened chocolate melted
  • 4 drops each red & green food color
  • 1/2 tsp. almond extract

Directions

  • Beat 1-5 med. 2 minutes.
  • Divide into 3 bowls.
  • 1. Add nuts an and green food color.
  • 2. Add cherries and red food color.
  • 3. Add chocolate and almond.
  • Grease Bundt pan well.
  • Pour 1, then 2, and then 3.
  • Don’t swirl.
  • Bake at 350 for 1 hour.
  • Cool 10 Min.
  • Remove Cool.
  • Sprinkle with confectionery sugar.

Cannelloni Recipe

Pasta

  • 4 cups flour
  • 2 eggs
  • 1 tsp. salt
  • 1/2 cups water

Cut paper-thin pieces in 4 in. by 3 in. pieces.
Boil in salted water 5 minutes and cool.

Stuffing

  • 4 oz Pork
  • 4 oz Veal
  • 4 oz Chicken
  • 4 oz Ham
  • 1/4 cup grated Romano cheese
  • 2 eggs
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. nutmeg
  • 2 tbsp. Butter or margarine

Directions

Chop meat fine.
Melt butter/margarine & brown meat except ham.
Add ham and seasonings.
Cover and simmer 15 minutes.
Grind meat.
Add eggs and cheese.
Should be fine and smooth.
Spread stuffing on pasta squares.
Roll and put in buttered pan.
Pour butter on top, layer of cheese & chicken broth.
Bake at 350 for 15 to 30 minutes.

Italian Ricotta Cheesecake Recipe

Crust

  • 1 1/2 cups ground butter cookies
  • 1/4 cup melted butter

Press on bottom and sides of greased 11 X 7 pan.

Filling

  • 3 yolks
  • 1 lb. Ricotta cheese
  • 2/3 cups evaporated milk
  • 1/2-cup sugar
  • 2 tbsp. flour
  • 1/4 tsp. salt

Directions

  • Italian CheesecakeMix all ingredients together.
  • Beat 3 egg whites until foamy.
  • Add 1/4-cup sugar.
  • Beat stiff. Fold into Filling.
  • Pour over crust.
  • Bake at 300 for 45 minutes.
  • Cool.
  • Refrigerate.

Chicken Parmigiana Recipe

Ingredients

  • 4 whole boneless skinless breasts halved
  • 1/2 cup flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cup olive oil
  • 1/2 lb Mozzarella Cheese

Directions

  • Coat chicken with combined flour, salt, pepper, in plastic bag.
  • Brown chicken in oil.
  • Place in 13 X 9 pan.
  • Top with mozzarella.
  • Bake at 350 for 15 min.
  • Serve with tomato sauce, spaghetti & grated Parmesan.

Mom’s Italian Anise Cookies Recipe

Ingredients

  • 4 cups sifted flour
  • 4 tsp. Baking powder
  • 1/2 tsp. salt
  • 4 eggs
  • 1-cup sugar
  • 1/2-cup margarine
  • 2 tbs. Anise
  • 1 tsp. Vanilla
  • 1/2 tsp. Salt
  • 1 cup toasted almonds

Directions

  • Combine eggs, sugar, anise, and margarine.
  • Combine flour, baking powder & salt.
  • Mix together and work in nuts.
  • Dough should be moist, not sticky.
  • Roll into 2 loaves 12″ x 3″.
  • Bake on greased cookie sheets at 350 for 30 minutes.
  • Cool for 5 minutes.
  • Cut into 1 in. slices
  • Turn on sides and bake 5 minutes more on each side.
  • Cool.
  • Makes 3 dozen.

Grandma’s Italian Butter Ball Christmas Cookies Recipe

Ingredients

  • Italian Butterball Cookies1-cup soft butter
  • 1/2 cup sugar
  • 1/2 tsp. salt
  • 2 cups flour
  • 1 tsp. vanilla extract
  • 1 cup semisweet chocolate pieces
  • 1 cup finely chopped pecans

Directions

  • Mix butter with sugar until fluffy.
  • Add salt, extract, flour, nuts, and chocolate.
  • Mix well.
  • Refrigerate for 1/2 hour.
  • Heat oven to 350.
  • Shape dough into 1/2? balls.
  • Place on cookie sheet.
  • Bake 15 minutes until light brown.
  • Let cool.
  • Roll in confectionery sugar.

Mom’s Thanksgiving Turkey Stuffing Recipe

Ingredients

  • 4 cups bread (6 slices)
  • 4 eggs
  • 1 tsp. salt
  • 1 tsp. parsley
  • 1 Tbsp oil or 1/4 lb scrambled hamburger drained
  • 1 Tbsp grated Romano cheese

Directions

  • Beat eggs.
  • Add salt, parsley, oil/hamburger & cheese and mix.
  • Remove crusts from bread.
  • Break into chunks and add to eggs.
  • Mix well.
  • Stuff bird.
