The dough is similar to puff pastry, creating layers that puff up beautifully in the oven, resulting in a crisp exterior and soft, airy interior. Ingredients:

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • 1 cup milk, warmed
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup filling of your choice (jam, Nutella, almond paste)
  • 1 egg, beaten (for egg wash)

Instructions:

  1. In a large mixing bowl, combine the flour, sugar, salt, and instant yeast. Mix well to guarantee the yeast is evenly distributed among the dry ingredients.
  2. In a separate bowl, whisk together the warm milk, softened butter, eggs, and vanilla extract until smooth.
  3. Gradually pour the wet mixture into the dry ingredients, stirring until a dough begins to form. Once combined, knead the dough on a lightly floured surface for about 5-7 minutes, or until it’s smooth and elastic.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.
  5. Once the dough has risen, punch it down and roll it out into a large rectangle on a floured surface, about 1/4 inch thick. Using a sharp knife or pizza cutter, slice the rectangle into triangles, making sure the base is wider than the top.
  6. Place a small spoonful of your chosen filling at the base of each triangle. Starting from the base, carefully roll the dough towards the tip to form a crescent shape. Make sure to tuck the tip underneath to secure the shape.
  7. Place the formed cornetti on a baking sheet lined with parchment paper.
  8. Preheat your oven to 375°F (190°C). While the oven is heating, let the cornetti rise for an additional 30 minutes on the baking sheet, covered with a cloth. Brush the tops with the beaten egg for a beautiful golden finish.
  9. Bake the cornetti in the preheated oven for 15-20 minutes, or until they’re golden brown and puffed up. Once done, remove from the oven and let them cool slightly before serving.
