Caprese Stuffed Chicken is a mouthwatering dish that beautifully combines the classic flavors of a Caprese salad with juicy chicken breasts. This recipe features tender chicken breasts stuffed with fresh mozzarella, ripe tomatoes, and fragrant basil, creating a delightful and colorful filling. Topped with a drizzle of balsamic reduction, this dish is perfect for both weeknight dinners and special occasions, impressing family and guests alike with its vibrant presentation and delicious taste.

The combination of fresh ingredients not only makes this dish visually appealing but also brings a burst of flavor in every bite. Cooking the chicken in a skillet before transferring it to the oven guarantees that it remains juicy while achieving a golden-brown crust. Serve it alongside a simple salad or some roasted vegetables for a well-rounded meal that captures the essence of Italian cuisine.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh mozzarella cheese, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling

Instructions:

  1. Preheat your oven to 375°F (190°C). While the oven is heating, prepare the chicken breasts by placing them between two sheets of plastic wrap and gently pounding them to an even thickness, about 1/2 inch thick. This guarantees even cooking.
  2. Season both sides of the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for 3-4 minutes on each side until they’re golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In a bowl, combine the sliced mozzarella, halved cherry tomatoes, and fresh basil. Mix gently to combine the flavors. This will be the stuffing for the chicken breasts.
  4. Carefully cut a pocket into each chicken breast by slicing horizontally, being careful not to cut all the way through. Stuff each chicken breast with the mozzarella-tomato-basil mixture, ensuring it’s evenly filled.
  5. Transfer the stuffed chicken breasts to a baking dish. If desired, drizzle with a little extra olive oil and season with additional salt and pepper. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  6. Remove the chicken from the oven and let it rest for a few minutes before slicing. Drizzle with balsamic glaze before serving to add a sweet and tangy finish.

Extra Tips:

For added flavor, consider marinating the chicken breasts in a mixture of olive oil, balsamic vinegar, garlic, and herbs for at least 30 minutes before cooking. This will infuse the meat with delicious flavors.

You can also customize the stuffing by adding ingredients like sun-dried tomatoes or olives for a Mediterranean twist.

Serve with crusty bread to soak up any leftover juices and enjoy your Caprese stuffed chicken!
