Instructions:
- Start by slicing the prepared polenta into ½-inch thick rounds. This will create the base for your stacks. You should be able to get about 12 slices from one tube of polenta.
- Preheat your grill or grill pan over medium heat. Brush the polenta slices lightly with olive oil on both sides and season with salt and pepper.
- Once the grill is hot, place the polenta slices on the grill and cook for about 4-5 minutes on each side, or until you achieve nice grill marks and a slightly crispy texture. Remove the grilled polenta from the heat and set aside.
- In a baking dish, spread a thin layer of marinara sauce on the bottom.
