Making this Mediterranean pizza is a breeze with store-bought dough and a mix of fresh vegetables and cheeses. You can easily customize the toppings to suit your tastes, whether you prefer more vegetables or additional proteins.
This recipe not only highlights the Mediterranean flavors but also encourages creativity in the kitchen, allowing you to experiment with different combinations and ingredients.
Ingredients:
- 1 pound store-bought pizza dough
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup sun-dried tomatoes, chopped
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Preheat your grill to medium-high heat. If using a pizza stone, place it on the grill to heat up as well. This will help achieve a crispy crust while cooking.
- On a floured surface, roll out the pizza dough to your desired thickness, approximately 1/4 inch thick. If you prefer a thicker crust, adjust the thickness accordingly.
- Lightly brush one side of the rolled-out dough with olive oil. This will help to create a crispy base and prevent sticking when grilling.
- Carefully place the oiled side of the dough directly on the grill grates or on the preheated pizza stone. Grill for about 3-4 minutes, or until the underside is golden brown and grill marks appear.
- Flip the dough over using a spatula and quickly spread the cherry tomatoes, olives, feta cheese, sun-dried tomatoes, and chopped basil on the grilled side. Season with salt and pepper to taste.
- Close the grill lid and cook for an additional 4-6 minutes, or until the cheese is melted and the toppings are heated through. Keep an eye on the pizza to prevent burning.
- Once cooked, carefully remove the pizza from the grill and let it cool for a minute. Slice and serve warm, garnished with additional fresh basil if desired.
Extra Tips:
For a more intense flavor, consider marinating your sun-dried tomatoes in olive oil and herbs before adding them to the pizza. You can also experiment with different cheeses, such as mozzarella or goat cheese, to find your preferred taste.
If you want to add a bit of heat, sprinkle some crushed red pepper flakes over the top before grilling.
