The recipe can be easily doubled or halved depending on the size of your gathering, making it a great option for both intimate dinners and larger celebrations.

Ingredients:

  • 24 large fresh mushrooms
  • 1 pound Italian sausage (mild or hot)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions:

  1. Preheat your oven to 375°F (190°C). Clean the mushrooms by wiping them gently with a damp cloth and remove the stems. Finely chop the stems and set them aside for the filling.
  2. In a skillet over medium heat, cook the Italian sausage until browned, breaking it apart with a spoon as it cooks. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent, about 3-4 minutes.
  3. In a mixing bowl, combine the cooked sausage mixture with the chopped mushroom stems, breadcrumbs, Parmesan cheese, parsley, Italian seasoning, salt, and pepper. Mix well until all the ingredients are thoroughly combined.
  4. Place the mushroom caps in a baking dish and fill each cap generously with the sausage filling. Drizzle a little olive oil over the stuffed mushrooms to help them brown while baking.
  5. Bake the stuffed mushrooms in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the tops are golden brown. Remove from the oven and allow to cool slightly before serving.
  6. Serve warm as an appetizer, garnished with additional parsley if desired. Enjoy the savory flavors and delightful texture of your stuffed mushrooms!

Extra Tips:

For an extra layer of flavor, consider adding some crushed red pepper flakes to the filling for a bit of heat. You can also substitute the Italian sausage with ground turkey or chicken for a lighter option. If you have leftovers, these stuffed mushrooms can be reheated in the oven or microwave, although they’re best enjoyed fresh out of the oven.

Pair them with a glass of wine for an elevated dining experience!
