Ingredients:
- 1 cup brewed espresso or strong coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 8-10 ladyfinger cookies
- Unsweetened cocoa powder (for dusting)
Instructions:
- In a shallow dish, combine the cooled espresso or coffee with the coffee liqueur, if using. Set aside to allow the flavors to meld. This will be used to soak the ladyfingers for added flavor.
- In a mixing bowl, whip the heavy cream until soft peaks form. This will add volume and lightness to your mascarpone mixture. Be careful not to overwhip, as you want it to remain creamy.
- In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Gently fold in the whipped cream until the mixture is smooth and well combined. This creates the creamy layer that will complement the coffee-soaked ladyfingers.
- Quickly dip each ladyfinger into the coffee mixture, ensuring they’re soaked but not soggy. Layer half of the soaked ladyfingers at the bottom of your serving cups, followed by half of the mascarpone mixture. Repeat the layers with the remaining ladyfingers and mascarpone.
- Cover the cups with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, to allow the flavors to meld and the dessert to set. Just before serving, dust the top with unsweetened cocoa powder for a classic finish.
Extra Tips:
For an added depth of flavor, consider infusing a bit of orange zest into the mascarpone mixture or adding a splash of vanilla extract to the coffee.
